Comfort Food Goes Fancy

This past summer I went to a wedding, and after hours of dancing and a few too many drinks, the night was coming to an end and I was hungry! My delicious dinner from 4 hours before was long forgotten, and I began plotting my stops on the way home to satisfy my late-night craving. Then, to my surprise, out came a midnight mashed potato buffet - complete with martini glasses to hold the delicious creamy potatoes and a plethora of toppings including sour cream, chives, bacon bits, butter, parmesan cheese, broccoli, and onions. Every single guest was elated by the cozy late night food and we all went home full and happy!

Bringing the nostalgic and sentimental appeal of comfort food into a fancy setting can be a delicious way to add a casual element and focus on the simpler things in life. You don’t need to have a less-formal wedding to enjoy a twist on these classic favorites as buffet food or passed appetizers:

Mac & Cheese with applewood smoked bacon or chopped jalapeƱos
Sliders with Kobe beef and an array of toppings
Pot Roast with fresh veggies
Tomato Soup with mini grilled cheese made with specialty cheeses
Pizzas mini-sized with gourmet toppings
Soft Pretzels with sea salt and honey mustard
Pigs in a Blanket with puff pastry dough and homemade ketchup

Need some sweets past cake time?

Mini Chocolate Chip Cookies served warm with shot glasses of ice cold milk
Cupcakes decorated in your wedding colors
Cotton Candy who doesn't love this fair inspired treat?

Happy Eating!
